About the Role
We are looking for an experienced and passionate Sushi Master to join our culinary team. The ideal candidate will be skilled in traditional and modern sushi-making techniques, have a deep understanding of Japanese cuisine, and maintain the highest standards of food quality, hygiene, and presentation.
Key Responsibilities
Prepare high-quality sushi dishes, including nigiri, sashimi, maki rolls, and specialty platters.
Select and handle fresh seafood and other ingredients, ensuring quality and food safety.
Create and innovate seasonal menus, introducing new sushi dishes to delight guests.
Maintain kitchen cleanliness and follow strict hygiene standards (HACCP compliance).
Train and mentor junior chefs and kitchen staff in sushi preparation techniques.
Monitor inventory, manage food costs, and coordinate with suppliers for the freshest ingredients.
Ensure consistency in presentation and taste, maintaining the restaurant’s culinary reputation.
Qualifications & Skills
Experience: 5+ years as a Sushi Chef or Sushi Master in a high-end Japanese restaurant.
Technical Expertise: Skilled in knife handling, fish filleting, and sushi rice preparation.
Knowledge: Deep understanding of Japanese culinary traditions, seasonal ingredients, and plating techniques.
Certifications: Food safety and hygiene certification preferred.
Soft Skills: Strong attention to detail, creativity, teamwork, and ability to work in a fast-paced environment.
Ability to interact with guests, explain dishes, and deliver an exceptional dining experience.
Preferred Attributes
Experience with Omakase service or live sushi bar performance.
Ability to train and develop kitchen staff into skilled sushi chefs.
Passion for Japanese culture and hospitality (“Omotenashi” spirit).
